It is said that it was in these directions when in 1870 a gambusino named Ambrosio Castillo found a gold nugget and with it, an entire vein. Immediately, thousands of adventurers arrived at the place and thus the Real del Castillo was born, which with the gold rush would become the capital of the then territory of Baja California. - Vinicola Infinito - You can visit the vineyard, talk with the winemaker and owner Pepe Pedrosa. You will have the unique opportunity to carry out a personalized and private tasting.
- La Cava de Marcelo - You’ll first head to La Cava de Marcelo which is the main cava producer of artisan cheeses in Baja California. This place is internationally recognized for its high quality and has been in business since 1911. You’ll enjoy a guided tour to learn about crop production, livestock care, preparation of cheeses, as well as, family history and cheese tasting and wine from the house in the cellar. The brand name is Quesos Ramonetti and it offers natural cheeses in different presentations: Fresh, with Basil, with Romero, with Pepper, Cheese Aged 6 months, 1 and 2 years, and Ricotta and butter of the highest quality. Some of these will be included in your cheese tasting so you can try the best of the best. Your tour then continues with lunch at the Restaurant La Casa Marcelo (own expense). Its menu offers a modern version of the traditional flavors of Mexican cuisine with the best local ingredients from Ojos Negros and Valle de Guadalupe.

This journey will lead you along the renowned Wine and Cheese Route, located in the Ojos Negros Valley to the east of Ensenada. This route is globally acclaimed for its top-grade wines and cheeses. Our initial stopover is at Vinicola Infinito, where Pepe Pedrosa, the proprietor and wine maker, will guide us. Here we will have the chance to explore the vineyard and acquire more insight into viticulture. Despite its dry terrain and intense climates, Vinicola Infinito stands out for the top-tier quality of its Shiraz grape. Subsequently, we travel to La Cava de Marcelo. Here, they offer an educational tour, providing knowledge about crop cultivation, animal husbandry, cheese production, and familial history. This tour concludes with a tasting session of cheese, handcrafted beer, and wine. Finally, from March through December, on Fridays, Saturdays, and Sundays, we will tour the Aleyha Lavender Farm with an option to dine at the Grosso restaurant, known for its lavender-infused gourmet dishes.
