Next up is 1888 Chop House for a signature dish in the hotel’s signature restaurant. Our grand finale is in the Vermillion Room with a chance to learn from a chef and taste another great pairing before finishing with a sweet bite. Along the way, you’ll engage with the culinary team, enjoy stories of the history, art, and architecture brought to life by our guide. Soak up the luxury of our small group private access (no more than 12). Amanda was our tour guide! She was pleasant, knowledgeable and engaging with the tour and the staff!
And then there was the food, the pairings and the history or the Fairmont and the area of Banff/Alberta!

Beautiful food and scenery. - The food was phenomenal, the scenery was absolutely breathtaking and Amanda, our guide, had endless knowledge of the castle, the region and the food. I also loved that she allowed each chef and waiter to tell their story and tell us about the food they prepared.

Outstanding Food Tour at the Castle - First off, our tour guide, Tracy, was fabulous! She was kind, thoughtful and very knowledgeable. We were so lucky to have her as we were experiencing our first night at the Fairmont Springs in Banff!!
All 4 food and beverage options were wonderful. We had someone in our group with a food allergy and Tracy took such good care of her and it was much appreciated!!

Food tour - This tour was awesome and the history was great. I would have been lost without a tour guide throughout the hotel. I have allergies and they made sure all the food I was eating was safe. If you have time to spend doing this tour go for it!

Worth Doing - A good experience and welcome to Banff. A mixture of seafood and meat dishes presented very quickly by the chefs. Amanda our tour guide was knowledgable. Any areas of weakness were due to Fairmont Staff rather than our tour guide.
