Truly the best activity of our entire 2 weeks in Italy - The Cavedoni family's vinegar production facility visit was the standout moment of our two-week Italian vacation. Our family of seven was warmly welcomed by Marcello, Paolo, and Elisa, who shared their seventh-generation legacy of crafting premium balsamic vinegar. Our daughters absolutely adored Paolo (the dad), who kept their taste buds happy throughout the gourmet visit. Elisa taught us about Trebbiano and Lambrusco grapes, hand-harvested and pressed to create the must, cooked to concentrate flavors. This was followed by a tour of the barrel room, where we saw barrels dating back to 1860, used in a meticulous aging process involving oak, chestnut, and cherry woods, explaining the differences between DOP and IGP vinegars. Marcello shared with us stories and explained about the fascinating family history and all the health benefits of real Balsamic Vinegar. The tasting was exceptional, sampling vinegars from youngest to oldest, alongside their pure Lambrusco Grasparossa di Castlevetro DOP wine, produced in limited quantities. Local pairings like Parmigiano-Reggiano and prosciutto elevated the experience, leaving our taste buds delighted. Their passion and hospitality, especially the time taken to educate us, made it deeply personal. We are eager to return for another visit.

Balsamic and so much more - Travelled to Bologna for a quick trip and spent our first day in the countryside near Modena. A great way to spend an afternoon learning about the family history and the process of making balsamic. Tasting the products - balsamic, vinegars, and wines all made by the family - was delicious, and gaining understanding of the process of creating balsamic was delightful. Sitting down to a board of local foods was a lovely end to a fantastic afternoon. Would highly recommend this tour.

Tasting Art - I was the only one on my particular tour. It was such a special experience and I will surely return with my family to share this magical experience with them. I learned so much about the history, production, and craft of making Accetto di Balsamico and had the most wonderful and insightful tasting experience. I've never experienced anything like it. Cannot recommend this tour highly enough.
