Our journey began at Taqueria Jalisco Ania, a family-owned gem that transitioned from a humble food truck to a celebrated establishment in Chattanooga. The aroma of freshly made tacos wafted through the air, and I couldn’t help but reminisce about the roadside diners my family and I would stop at during our travels.
