Chef Michele’s ten-year experience in the culinary industry has taken him to high-end kitchens and Michelin-starred restaurants around the world. He has honed his skills and culinary techniques and made a name for himself in Tuscany. The class will begin with an introduction to making pasta from scratch. You’ll learn the time-honored recipe to make pasta dough using fresh ingredients. Then, learn the technique to properly knead the dough and shape it into different pasta shapes. Craft a light extra virgin olive oil and pepper sauce, a hearty ragu with tomatoes, carrots and basil and a rich brown butter and sage sauce to pair with your handmade pasta.
