The Pakerisan River Valley, located to the northeast of Ubud, was designated a Cultural Heritage Area by UNESCO in 2012. This enchanting river valley is home to ancient ancestral sites that date back to the 8th - 12th centuries. The area reflects ancient animist beliefs and the influences of Hinduism and Buddhism, which spread from India to Bali through Javanese kingdoms.
In Bali, chefs are known as Belawa, a name derived from the Buddhist belief in Buddha Bhairawa.
Balinese cuisine is characterized by the harmony of 8 spices from the mountains, symbolizing the 8 directions of the wind, and 2 symbols of dualism from the sea, representing the center.
This blend, known as “Basa Gede” or complete sauce, imparts a distinctive flavor to Balinese dishes.
