A Taste of Mexico: From Market to Table
As a professional surfer, I’ve spent countless hours chasing waves and exploring the vibrant cultures of Central America. But this time, I decided to swap my surfboard for a spatula and dive into the culinary world of Los Cabos. My wife and I were celebrating our anniversary, and what better way to do it than by immersing ourselves in the flavors and aromas of authentic Mexican cuisine? We signed up for the Mexican Cooking Class and were ready for a day of cooking, eating, and fun.
Our adventure began in the heart of Cabo San Lucas, where we met our hosts, Chef Issa and Chef Carolina. They welcomed us with warm smiles and matching aprons, which initially made me skeptical, but I soon realized this was no corporate gimmick. It was a genuine family affair, and we were about to become part of it. We embarked on a tour of local markets, picking up fresh produce and spices, and even made an unexpected stop at a charming bakery. The vibrant colors and intoxicating scents of the market were a feast for the senses, setting the stage for the culinary journey ahead.
Crafting Culinary Delights
Back at Chef Issa’s home, we donned our aprons and got to work. The first task was squeezing 200 limes for our margaritas, a surprisingly fun and communal activity. Chef Issa shared a nifty trick for maximizing juice extraction, a tip I’ll definitely use back home. With margaritas in hand, we were ready to tackle the day’s recipes.
The cooking class was hands-on and interactive, allowing us to participate as much or as little as we wanted. We started with the basics, crafting pico de gallo and two types of guacamole. The kitchen buzzed with activity, laughter, and the clinking of glasses as we sipped on our self-made margaritas. The open bar concept was a hit, and we found ourselves perfecting our margarita-making skills throughout the day.
The main event was the tamales, a dish I’d always wanted to learn. Under the guidance of our hosts, we crafted two different kinds, each bursting with flavor. Alongside the tamales, we prepared mashed potatoes, salsas, and more. The feast we created was nothing short of spectacular, and by the end, we were happily stuffed.
A Festive Finale
As the day wound down, we were treated to a tequila tasting, a delightful surprise that added a festive touch to the experience. We sampled various tequilas, learning about their unique characteristics without any pressure to purchase. To top it all off, we indulged in churros with chocolate sauce and condensed milk, a sweet ending to a perfect day.
Throughout the class, a live drummer and singer provided a soundtrack that matched the mood of the group. The music started with mellow bossa nova and gradually became more energetic as the day progressed. It was the perfect backdrop to our culinary adventure.
