Your journey commences with an exploration of Monopoli’s historic center, pausing at its Duomo, the Basilica Concattedrale. Following that, we journey into the heart of Puglia’s countryside, a landscape adorned with olive groves and dry-stone walls.

Continuing along the tour, we unravel ancient paths leading to the rural church of Spirito Santo. This millennium-old grotto church has operated since the 9th century and is adorned with medieval frescoes. The twisted olive trees and fortified farmhouses, or ‘masserie’, embody the enthralling charm of rural life.

The tour culminates with a peaceful cycling excursion and a delightful tasting of homemade sorbetto, free from city traffic.
