The whole experience was incredible not only did we gain a lot of knowledge about the gastronomical culture of Oaxaca but we know now how to make Mole and had a great time doing so!

This experience was so very rich, fun and educational! Victor is a great teacher and has such depth in Oaxacan cooking. The trip to the market was so very interesting and fun. We made many authentic dishes (as in, Victor’s grandmother’s recipes), all of which were delicious. I learned about herbs I’d never worked with, substitutes to make vegetarian foods taste hearty and other substitutes for herbs hard to find in the States. The entire experience was so very worth the time and money. I’ll definitely do another class.

It was pleasurable but not what we expected. I was expecting a traditional mole negro and we had a vegetarian cooking class instead. While the food was delicious we were not given recipes and not did we get to see the entire process, especially for the green mole. We for sure didn’t like that we paid for a cooking class on vacation and had to wash dishes while the chefs stood around and talked. Had I been made aware that the class structure and content was not strictly negro mole as expected, we would have not even booked. We made nothing that I wasn’t already familiar with as a chef and restaurant owner.
