- Santiago Matatlan - Walking through different areas of Santiago Matatlán; a town called as the “Mezcal’s World Capital”, you will begin to discover how the processes of distillation develops inside the factory, the way the agaves grow in the field and learn how to distinguish one type of mezcal from another.
On the day you will develop an in depth knowledge of mezcal, you will be provided with multiple approaches to it.
We will walk the agave field, to being on perfect setting for a few pre-hispanic myths, and finally, go on to make a Mezcal toast with nature.
We will head to the palenque where you will experience the mezcal tasting, where you will be able to test you newly developed knowledge. Afterwards we will go to the terrace of the factory where you will be served a traditional Oaxacan meal cooked on the comal, and you can enjoy the beautiful view of the valley and the agave fields.
The drive between the city and the village takes 40 minutes each way.

In partnership with Mezcal Dainzu, guests are invited to delve into the rich history and scenic beauty of Santiago Matatlán, known as the Capital of Mezcal.
This journey brings traditions to life through the Santiago Hernández family, who have safeguarded the art of agave distillation for generations — since the mid-19th century — a time when mezcal was undervalued and nearly prohibited.
Doña Octavia and Don Leoncio — fifth and fourth generation mezcal masters — together with their son Carlos, extend a warm welcome to their agave fields, offering breathtaking views, to celebrate with nature and demonstrate the artisanal production process at their rustic distillery.
During the tasting, participants will uncover the diverse flavors that wild agaves provide. Additionally, there will be a selection of mezcales crafted especially for community festivities.
The experience concludes with a meal featuring moles and local dishes, prepared by Doña Reina, a celebrated local chef, at her charming restaurant situated in the town’s historic center.
