A memory to cherish! - Most memorable was how Armando made the whole process flow so efficiently while teaching us about the various ingredients and their origins and Spanish names. The seven of us, strangers to each other, worked together like a well oiled machine and had great conversations and laughs together. The finale of a beautiful and delicious meal shared was pure joy and contentment. I left feeling fulfilled on so many levels, and will always remember Armando and the exceptional experience of making an authentic Oaxaca mole meal.

Beat Cooking Class Ever - One of the best cooking classes I’ve had! Started with a trip to the market to buy fresh produce and learn about local vegetables. The Chef was great and we had lots of opportunities to participate In the class. The final product was delicious! Wonderful food and the classmates were international and very congenial!!

A gastronomic and cultural adventure - Victor was an excellent guide and teacher. He brought us to a local market for ingredients, history and education. Back at Etnofoods we learned to make a coupld of moles, a wonderful and aromatic soup, tortillas, salsa and a corn dish. All of this while learning more about moles, Zapotecs, and even some of his background and cooking history. Everything tasted great!

We learned about the culture and cuisine - Victor was both a cultural ambassador and a chef-teacher. We had a great experience going to a local market to learn about and buy fresh ingredients for our moles and the other recipes. We learned about the complexity, variety and process of making moles. In addition, we made a savory herb-based soup, a favorite of Victors from childhood, a delicious corn dish, and fresh spicy salsa. It was a feast and we are equipped to make these recipes when we get home. We highly recommend this class. Thanks Victor!

After the rain comes Mole! - We had some bad weather going to the market but it added to the experience! It was an incredible opportunity to immerse ourselves in what it takes to make traditional Oaxacan mole. Would definitely do this again

If You Love Food, You'll Love this Class! - The class is a complete experience -- educational, fun, and very hands-on. The trip to the market was informative and the chef who took us explained everything. She also allowed us to look around and explore, and to ask questions about other things in the market. In the kitchen, the chef and her assistant were patient, kind, and thorough. They carefully demonstrated everything for us before having us try on our own. I speak only a little Spanish, and communication was no problem -- both the chef and her assistant were able to clearly communicate everything in English when necessary (which was often). They also creatively accommodated one of the other participant's food allergies. Together, we made Mole, Tortillas, Quesadillas, and Salsa. At the end, we had an amazing dinner together. I highly recommend this experience!

Local Market and Cooking - The cooks were very accommodating and let me try new foods at a local market. The food was delicious and abundant!! They taught me lots of new things about the cooking and food!

Great, but a bit different from the description - Loved it. BUT, it was different than the description. We made 1 (easier) mole and several other dishes with a group. So I don't feel like I made a mole myself or understand the whole process now. All dishes were delicious and eating with the group was great. Would 100% recommend. But do realise that it might not be for you if you are only interested in mole.

Very average cooking class in Oaxaca. - The leaders were good. The amount of cleanup was excessive. Also, some of the meal was made by staff not us. We lost the opportunity to learn more.
