The Real Taste of Sicily - My wife and I met Marco at the Capo outdoor market in Palmero. We were joined by three others. Marco was interesting and entertaining from the start. We went shopping in the market for the ingredients for our meal. Marco seemed to know everybody in the market. He kept giving us samples of meats and vegetables to taste. After finishing the shopping, we walked a few blocks to Marco's flat. His flat was spacious with high ceilings and marble floors. We gathered around a large table to start prepping the meal. We made fresh peso ravioli in a tomato sauce, a side dish made of eggplant, olives, capers, and celery. We also made swordfish rolls and finished with homemade cannolis. We spent about 3 hours prepping and cooking our meal. It was very hands on. Marco was so much fun to be around and has a passion for teaching others how cook. We sat family-style around the large table in the dining room and enjoyed the meal together. My wife and I thoroughly enjoyed the real taste of Sicily.

Like being invited to a Sicilian home for lunch - My first cooking class on vacation: Marco met us, designed a menu based on our preferences and restrictions, then we went shopping for ingredients in the market. We met his preferred vendors and did some shopping ourselves. We then went to his large, homey apartment nearby. The kitchen was spacious and well-equipped. Marco led us step by step through making everything from scratch: pasta and cannoli dough, fillings, sauce, caponata, swordfish rolls. I never felt rushed or uncertain, and the ambiance was fun and lighthearted. We got to understand the uniqueness of Sicilian produce and ingredients, and I learned some new techniques and tips that I’ll use in my own kitchen. All the food was made from simple, high quality ingredients. We ended up sitting down to a lovely lunch together at a beautifully set table. A wonderful experience worth more than its price and highly recommend.

Fun and Educational - We choose Marco due to the rave reviews on Tripadvisor and concur with everything positive that people have reported. Our friends loved our photos of the food we cooked and are anxiously awaiting for us to recreate the dishes for them. Fingers crossed we paid enough attention. Thanks Marco!

Deliciousness served with humor, grace and knowledge. - Marco is a skilled chef, masterful, and a fabulous teacher, from basic knife handling to teaching about purchasing and cooking pasta, which types of herbs and spices, species of fish, and successful purchasing techniques at the open air market. He is kind, and engaging. It was a delightful experience, a perfect way to be introduced to Palermo.

Fun cooking class in Palermo - This was an excellent experience. Marco was friendly, energetic, knowledgeable and enabled a fun and informative day. I will do this again in a heartbeat the next time I'm in Palermo. I think of Marco as the Stanley Tucci of Palermo and the food .was delizioso

Excellent chef helps you cook the real food of Palermo - We loved our day with Marco Cilla. He was friendly and always smiling. We enjoyed meeting at the market where he bought the ingredients for the food we fancied. We went back to his large apartment which is set up for showing us what to do in a relaxed way. He was a very good teacher and the food was very tasty. Marco shows you how to cook the dishes the local way. Also the historic centre of Palermo is lovely.

Chef Marco is Fantastic!! - Chef Marco took us on a fabulous adventure. We began at the Capo Market, shared thoughts on dishes to create then meandered through the market, selecting fresh vegetables, herbs, meats, squid and cheeses. Then a very short walk to his home He is on the first floor and has two balconies in the prep/kitchen. The doors were flung open to let in the fresh air and sunshine. Chef Marco then created a most fun and creative cooking class. We were involved in every aspect of preparation. We learned knife skills, made ravioli from scratch with the most incredible sauce. The baked stuffed squid was delicious and considered the favorite dish followed closely by the cannoli. Chef Marco is fun, entertaining and so incredibly knowledgeable and patient with us as we are beginner cooks.. I wish I could eat any of his dishes every night. This was truly such an incredible way to learn to make some Sicilian food. Yum! Sign up quickly as he does sell out. It was a great value for the price.

Love it! - I very much enjoyed this cooking class and I can highly recommend it! First, we did a market tour to buy some ingredients, and we all headed to Chef Marco's house where the class was held. All of us in the class were given a very warm and hospitable welcome. We were taught how to make some classic Sicilian dishes and dessert. It is a very much hands-on class, which is what i had hoped for. This definitely made it more fun and interesting. I definitely enjoyed every minute of it. Chef Marco is a really good instructor and certainly knows his craft. He is very motivating and keeps an eye on everyone. I would definitely do this again!

Italian cooking dreams do come true… - This cooking class was definitely a highlight of our trip. We were on a 7 day cruise that stopped in Palermo and by chance saw this cooking class on Viator. I must admit I was a little apprehensive since it mentioned going back to the chef’s house to cook the meal. It was an amazing experience and I would do it over again if I could. We met Marco at the market along with 2 other couples. The market was a 15 minute walk from the Port. We found Marco very easily. He introduced us to the other couples and asked us about our food preferences and gave us a few options for our menu. Then we all walked through the market while he purchased the fresh ingredients for today’s menu. The market itself was an experience with all the vendors and fresh food all the while Marco was talking to us about the vendors, food etc. We made the short walk back to Chef Marco’s beautiful & immaculate clean apartment. We had a truly wonderful afternoon learning how to prep and cook our meal with our new friends. Chef Marco was incredibly patient and funny so we were all enjoying ourselves as we learned to make this delicious menu. We made ravioli, stuffed swordfish and a mackerel dish. Lunch was so good and we had so much fun making it. I would highly recommend this experience to anyone looking for a fun alternative activity while visiting Palermo.

I Couldn’t Stop Smiling - What a great surprise! I was nervous about this because I can only make omelettes, but my wife and friends were doing it so…. We started by following Chef Marco through a wonderful out door food market where he got all the fresh ingredients. After arriving at his apartment, we put on our aprons and started the preparation. We made everything from scratch as he had each of us helping to prepare the meal. The meal was copanata, pesto ravioli, veal roll up, and cannoli. We then sat down in the dining room to eat. Chef Marco was funny, and very instructive. The highlight was when a real chef called me “chef.” I couldn’t stop smiling. Highly recommended.
