• Ristorante Salice Blu - Visit the local Bellagio Cheese factory where Chef Luigi Gandola will pick you up. He will guide you through the same cheese factory where his grandfather used to deliver fresh milk every day! After exploring the facility and the various cheese products, we’ll take some milk back with us and begin the cheese-making process at Salice Blu Restaurant. We focus on producing small batches to ensure the highest quality, creating fresh cheese and ricotta paired with local red wine.

The legacy of the Bellagio Dairy is intimately tied to its members: from the original group of over one hundred to the present eight. The challenges they’ve faced have forged a strong bond that has sustained the cooperative’s operations. Since the dairy’s establishment in the 1930s, through various innovations and strategic and commercial decisions, the members have collectively navigated every development, ensuring the continuity of the local agricultural community.
