I WISH I COULD GIVE THIS PLACE A 20!!! - My family consisting of a party of four adults were blessed to enjoy an afternoon cooking with Fulvio.
When the very beginning Fulvio made us feel welcome. He escorted us to his beautiful property and greeted us with a huge smile. He asked us to put our stuff down and wash our hands.
Fulvio proceeded to teach us how to make pasta from scratch! This was such a great treat. After completing the "spaghetti" like pasta (they were a bit fatter than the normal spaghetti). Fulvio then brough a variety of fresh goat cheeses and other types of cheeses, placed slices on a tray and instructed us to add nutmeg, caramelized onion jam, on some of them. After completing the cheese platter, we cut up fresh tomatoes from Fulvio's garden, fresh garlic, and added them to a plate with capers and THEIR OWN GROWN EXTRA VIRGIN OLIVE OIL to make bruschetta which was going to be one of our appetizers.
Fulvio asked us to walk with him into his kitchen and we started making a white beans pasta sauce and a tomato base pasta sauce. During all of this time we were using their EVOO. We were laughing and having a wonderful time.
After we were done cooking, Fulvio escorted us to a beautifully set table where we waited for him to serve us three types of wine, two red and a white, the bruschetta with the white beans and the fresh tomatoes and the cheese platter. Dear Lord - everything was DELICIOUS!!! After we were done with our appetizers, he brought us the pasta with the two sauces - i had never tasted such delicious sauces. I do not know if it is the freshness of the tomatoes, the EVOO, or the beans grown without pesticides that tasted AMAZING.
We finished our meal cordially speaking with Fulvio about his adventures as a professional scuba diver instructor in the Philippines and how he went all over the world traveling until he ended up in cooking school to study the culinary arts.
When we said our goodbyes, I promised Fulvio that I would purchase their olive oil. And I did. They shipped it beautifully and carefully wrap - and even despite a small hiccups THEY EXCELED IN THE DELIVERY AND CORRECTION OF the hiccup regarding their AMAZING EXTRA VIRGIN OLIVE OIL. Katia treated me with the upmost respect and courtesy during the ordering and delivery process - despite the fact that she was caring for her mom who had a shoulder replacement surgery.
FULVIO AND KATIA ARE TRULY AMAZING!!! If you are considering taking Fulvio's cooking class or ordering their extra virgin olive oil DO IT!!!
I cannot wait to go back to the Tuscany area to do this cooking class again and enjoy the company of Fulvio and Katia.

Cooking with Fulvio - Our cooking class with Fulvio was an unforgettable experience! He is an extraordinary chef, and the menu we prepared was both outstanding and absolutely delicious. We had such a great time learning how to make pasta and bruschetta, and the whole process was filled with laughter and fun. Fulvio's warm and encouraging personality made the experience even more special – he’s not only a fantastic chef but also a great conversationalist, keeping us entertained the entire time. His homemade olive oil was so delicious that we ended up purchasing some and having it shipped home. We can't wait to receive it! Highly recommend this class for anyone looking for a memorable, enjoyable, and educational experience in Italy!

Fabulous Tuscan cooking class - We made great memories attending the Tuscan cooking class! Fulvio taught us how to make delicious pasta with two types of sauce. We also made bruschetta and saltimbocca. Everyone got a chance to help prepare a delicious meal and enjoy it together. Truly a highlight of our trip to Italy!

AMAZING cooking class, exquisite food and experience!!! - Our family had the pleasure of joining Fulvio for a cooking class this past November 2024.
Upon arrival, he greeted us with the biggest smile and made us feel welcome right away. He instructed us to wash our hands and right after we started making the pasta we would later eat.
Our menu included two types of bruschetta (one with hand-picked tomatoes from the home’s garden) and the other one with cannellini beans.
Fulvio then assisted us in shaping the pasta and preparing the tomatoes for the bruschetta. We then entered the kitchen where Fulvio taught us a few tricks regarding cooking with “his extra virgin olive oil” (Fulvio and his niece have thousands of olive trees and lemon trees in their gorgeous property which is also a B&B). The property is located in the beautiful area of Saint Gimignano.
Fulvio prepared a fabulous cheese tray with fresh and aged goat milk cheeses with onion marmalade, fresh nutmeg and honey…yummy!!!
We made two pasta sauces one with tomatoes and the other one with cannellini beans. After completing the sauces, we were escorted to the dining room where we ate the cheeses and two pastas accompanied by three types of wines!!! Two red and one white.
Afterwards we went back in the kitchen where Fulvio instructed us on how to prepare the must delicious chicken cutlets with sage prosciutto and cheese with a sweet wine glaze.
We finished the over two-hour cooking class with the best conversation with Fulvio.
We left extremely happy, full and pleased with this experience which we will never forget.
THANK YOU SO VERY MUCH Fulvio for this awesome experience!!! We highly recommend this cooking class. ❤️❤️
PS Fulvio and his niece export EVOO…I’m ordering a few bottles today.

A fun and tasty experience - What a wonderful time we had at this cooking class! Fluvio was so willing to share his wealth of knowledge of Tuscan cooking. Making pasta was fun and so much easier than I imagined. The dishes we prepared were so delicious! Such a memorable experience! I can’t wait to try the recipes at home.

Fun/relaxing experience in beautiful area - This class is an amazing choice if you are visiting tuscany. Fulvio is an amazing teacher, and it is a very laid back experience. The recipes are simple yet delicious. You will have a new appreciation for Tuscan food.

Good experience - While in Tuscany one of our excursions we took a cooking class. Very enjoyable , great food, I highly recommend. Katia was our hostess, most of us were from the USA and she spoke many languages to make it comfortable to us all. We picked up many tips and brought home some wonderful recipes.

A memorable lesson! - Wonderful personalized experience. Excellent tuition that explained the basic philosophy of Tuscan cooking. This was paired with hands on instruction that resulted in a delicious and authentic meal. The host was engaging. The location exuded Tuscan charm. I would strongly recommend this experience for anyone who is interested in Tuscan cooking. Or even if they just fancy a wonderful meal.

Il Vicario should not be missed! - Fulvio & Katia are wonderful! Loved the cooking class and olive oil tasting. Katia is so knowledgeable and informative. The food was delicious! The olive oil amazing! Purchased bottles and had them shipped. Loved talking to Fulvio who has a wealth of knowledge also. The entire experience was wonderful and hope to visit them again.

Great cooking class, olive oil and Tuscan hospitality. - Fulvio and Katia are wonderful hosts and teachers. We spent five nights staying at Il Vicario and had a lovely class with them. Using Il Vicario as a base, we explored several of the walled cities and beautiful countryside. We made two kinds of pasta and several sauces as well as a delicious dessert. Katia's olive oil is really special, and we ordered some to have shipped to us after the fall harvest is finished and the oil is pressed. They made us feel so welcome, and we enjoyed several dinners that Fulvio made for us. A great introduction to Tuscan cooking and hospitality.
