The natural rock and its temperature-regulating properties ensure stable and optimal environment for the wines to age gracefully both in Qvevri, in stainless steel cisterns, as well as oak barrels. The slower fermentation process that occurs in this cellar allows the wines to develop a complexity and depth of flavors that are truly exceptional.
