Venetian Cooking School: Market Visit

We will visit the fish market. You will learn about local fish, recipes and technical training from a culinary professional. You will learn to cook typical dishes that you can then make at home for your friends, surprising them. We will cook fish, meat and seasonal vegetables. Of course we will eat what we prepare.

  • Campiello del Spezier - Together, we’ll select fish, vegetables, and meat. We’ll craft a menu and prepare everything in a fully-equipped kitchen. I’ll guide you through making traditional Venetian dishes, cichetti, and various cooking techniques (like risotto and pasta), as well as marinades. We’ll enjoy our creations with a glass of wine.

Not your ordinary tourists' cooking class! - This is not your usual travel cooking class. Marco was wonderful and showed us various techniques for several different dishes. The menu for each class will be different, as it starts out at the fish market and the ingredients are bought fresh. I highly recommend this class - it's fun and easy for everyone!

High point of my week in Venice - Marco's Venetian cookery class, held in his tiny cicchetteria as a really imaginative initiative, was a delight - truly the high point of my visit. He asked me to choose at the nearby market what fish I'd particularly like to learn about, then added other fish and ingredients, and back for me to cook everything under his friendly direction: creamed cod, a shrimp/onion/raisin dish popular with fishermen, marinated salmon, squid risotto with artichoke hearts, St Peter's fish with a clear lemon sauce - and tiramisu. Then I got to eat it, with a glass of wine - yum. Marco has deep knowledge of how ingredients and cooking methods work - different oils, cooking times, the history of dishes - but doesn't overload you with technicalities. He's easy to talk to, and interesting on Venetian ingredients such as the mini artichokes that are grown on an island in the lagoon. These and the fish/seafood generally are influenced by the particular nature of the lagoon - 80% seawater from the Adriatic, 20% river water. Highly recommended for anyone who loves to know about food and has even just basic cooking abilities.

Fun, informative, and so so yummy!! Marco is a gem of a cooking instructor :) - Marco's cooking class was the highlight of our stay in Venice. Tip - Be sure to meet him at the fish market. My friend and I learned a LOT about various cooking methods after our group of 5 picked out the proteins and some veges at the market. We cooked in his nearby small, quaint restaurant. He was well organized and he made sure everyone kept busy and felt included. With his guidance, we fixed an incredibly delicious, multi-course lunch in a relatively short time. Marco adapted things to accommodate our food preferences and emphasized how the cooking techniques could be applied to our own creative efforts once home. He kindly followed up with an email with all the recipes and an offer to be a continuing resource since "the cooking class is not finished". Marco is a knowledgeable, patient and caring teacher. This is the real deal. Book this class for a fun, authentic, hands-on learning opportunity. Buon appetito!

Nailed it! - Wow, this is the one you want to do! From our first visit to Venice and seeing the Rialto fish market, we thought gee, wouldn't it be cool to shop here one morning and prepare a meal with these amazing ingredients...check done. This isn't one of those superficial, mostly pre-prepped classes. You are involved from selection through cleaning, prep, cook, and of course, eating an authentic multi-course meal. It's not fancy and superficial but rather real and engaging. Marco is a wonderfully gracious host and instructor. You will leave with an appreciation for some traditional Venetian cuisine, a full belly and a smile on your face.

Seafood! - Marco was fantastic. I do catering in the US and love to attend cooking school when out of the country. This is my third school in Italy and was looking for a different menu selection. Marco nailed it Venetian style. 5 unique courses I can replicate back home and all were delicious. Cooking is done in his quaint osteria on the waterway. Charming guy, great english. Blessings!

Fabulous Cooking Class! Don't Miss It!! - Fantastic cooking class with Marco! We had originally scheduled this for a day that the fish market was closed, unknown to us and to Marco. When we met him there we agreed to shift this to the next day and had a delightful time touring the market and picking up a few things. We went to his osteria where we prepared fried calamari, risotto al nero di seppia, artichoke hearts (fondi di carciofi), shrimp in saor, marinated salmon, and tiramisu. We had a thoroughly engaging time speaking with Marco and enjoyed the meal quite well. Highly recommend this as a great day to spend a day in Venice - we will do it again next time we return. We learned a number of techniques that we will use in the future as well.

Fun and tasty for the whole family - Great experience for all of us! (Kids 12 & 15 and adults.) Marco was fun, knowledgeable, and a pleasure to work with. Communication was great before during and after. Food was delicious. A native, he knows everyone. MRCO took us to the market , worked with us in our likes and dislikes, and created a menu around that.

Five star Venetian experience - There were many highlights. Marco is a marvelous instructor, kind and cheerful. He was flexible about the menu, sticking however to Venetian cooking techniques. And the meal was delicious, the best we enjoyed all week. Our 13-year-old prepared spaghetti alle vongole, risotto di zucchini con frutti di mare, shrimp marinated in “saor” and marinated salmon. The experience entailed five hours very well spent, including an exploration of products at the fish market and a picturesque walk to Marco’s osteria in a residential neighborhood nearby.

One of the best tours I’ve ever taken - Amazing tour of cooking. First we were greeted by our guide and chef, Marco. At the Rialto market he asked what we enjoy eating, which is seafood. Marco our chef then showed us how to pick the freshest fish, clams, shrimp, scallops and vegetables. He was patient teaching us how to prepare a five course meal. Which we actually prepared with his expert guidance. My wife and I actually made… marinated fish, shrimp and eggplant. Scallops and pasta. Tiramisu from scratch. Sautéed artichokes. Our main course was the most delicious white fish, we selected from the Fish market. Then we had lunch at a beautiful table in Marcos restaurant with classical music playing the background with white wine. One of the best Tours I’ve ever taken. I highly recommend this tour.
