Authentic balsamic vinegar is derived from a blend of Trebbiano and Lambrusco grapes. The concentrated syrup, referred to as mosto cotto in Italian, is then aged for no less than 12 years in a series of gradually smaller barrels. The barrels encompass various kinds of wood, including chestnut, cherry, oak, mulberry, ash and juniper.
