You shouldn’t leave Italy without indulging in at least one pasta meal.. Hence, we’ll instruct you on two! Discover how to shape ‘sfoglia’ (fresh pasta) manually and how to create two distinct types of pasta from scratch under your Cesarina’s guidance. On top of it, you’ll also master the preparation of the classic Tiramisu. Express your love for Italian cuisine while forming new friendships during this interactive cooking class. It’s an ideal way to genuinely immerse yourself in Italian culture.

The best meal you will ever eat! - This was the best part of our trip to Italy. Paola and her family welcomed us into their beautiful home and made us feel like family. Paola was a wonderful teacher and made everything look and feel easy. She took the time to share personal tips and gave us a taste of Italy that far exceeded the class description. If we ever return to Viareggio, I will schedule another class with her immediately. We are so grateful for this experience.

A wonderful experience - We had a wonderful morning cooking with Anna. She was a fabulous host and we enjoyed meeting her lovely son and Pina the dog ! The food was delicious and my husband plans to make the tiramisu when we get back to Australia.

Amazing Paola Pasta Workshop - Being welcomed into the home of Paola, Maximus and their friend Roberta together with Tobia their little dog was heartwarming. The overall experience of making two types of pasta and tiramisu was amazing. We as a family had an extremely enjoyable time and were amazed with the results we achieved. The hospitality was superb and we enjoyed chatting in a mix of Italian, English and translator. Would thoroughly recommend this experience.

Authentic Tuscan Night - My daughter and I had a wonderful time, felt completely accepted into Paola’s home. We laughed made pasta and tiramisu and shared Limoncello recipes! What a wonderful authentic Tuscan night!

Homemade Pasta - like Nonni makes - We had the most amazing cooking class with Paola. She welcomed us into her home with open arms. The table set with rolling pin, flour, salt, olive oil, eggs and boards to roll out the dough. She gently walked us through each set of the pasta making process. We made ravioli, pappardelle and tiramisu. In addition, she prepared several appetizers of homemade cheese and sausage for us the enjoy. She made us feel right at home. We highly recommend enjoying this class.

Food tour in Viareggio with Le Cesarine - Maria Paola and her husband were truly welcoming, like meeting friends for an afternoon of chatting and tasting, they accompanied us around Viareggio to taste typical local products. We loved the Cecina, simple but excellent, and then ended up in a little place on the edge of the park where they brought us two platters of cheeses, cured meats and various preparations accompanied by panzerotti, fried polenta and red wine. Everything super. To finish with a thirst-quenching ice cream in the area. The food seasoned by their company was truly an experience to be recommended.

Paola Puccinelli brilliant Hostess - Cooking with Paola Puccinelli was a wonderful experience. Paola has a bubbly, friendly personality, making you feel at home straight away. I learnt all about pasta making and Tiramisu. Paola the perfect Hostess laid out a spread of Tuscan Specialities to go with the Papardelle and Tortelli which we made. To round it off Tiramisu. I recommend this course thoroughly to anyone interested in Pasta and Tuscans way of preparing food. Thank you Paola .

Cooking in Tuscany - Paola Puccinelli opened her home to teach the making of Tuscan Pasta, Tordelli and Pappardelle and Tiramisu. Be prepared for a wonderful experience with a Hostess her just made it all worthwhile. Paola shows you how and the you get busy making the pasta yourself whilst she stands by showing how to use the pasta machine and instruments correctly. This is important to get the right consistency before filling the pasta or cutting it into the pappardelle. The filling is also shown exactly : hands on again chopping fresh herbs, garlic, warming it in extra virgin oil and mixing into the prepared mashed potatoes with egg and parmesan. Learning how to roll out the dough use the pasta machine it was time to make the little tordelli. I learnt so much about the kneading and preparing of the 2 different doughs. Making the Tordelli has its own techniques. After cutting them out they were placed on semolina cloth and in the fridge to cool- all tips needed in making the best pasta you have ever tasted. Paola already prepared the beef ragout for the pappardelle. Then whilst the pasta was resting we made mini tiramisus. This was very quick in preparation. After 3 hours of preparation it was time to cook. The pasta is cooked very quickly for 2 mins only in boiling salted water. The pappardelle were served with the beef ragout and the tordelli were drained and swirled in butter with fresh sage. Then it was time to enjoy the fruits of our work. Be prepared to eat for at least 11/2 hours on top of 3 hours allocated for cooking class. Paola prepared the perfect table. We were accompanied by her husband and lovely girlfriend who took Fotos and helped clean up after us. The table was set and Paola had prepared Tuscan Salami , Proscuitto, Chicken liver paste on bread , cheese from Tuscany and her home made Tuscan fruit relish which was delicious.Prosecco was served with the anti pasti and a lovely organic Chianti with the pastas. Then there was a delicious desert to finish. After 41/2 hours of cooking and learning and eating it was time to say goodbye. I can thoroughly recommend this course to everyone who loves italian food and needs to know how to prepare pasta correctly. Paola, I cannot thank you enough for the wonderful time I had. Wonderful cooking class in Viareggio - I had a wonderful time with Maria Paola, her husband and of friend of theirs. It was really good to create the pasta and tiramisu, Maria explained and showed everything, I had fun in the process. When everything was ready we had some appetizers, and then tasted the pasta and the tiramisu, while having really good conversation (and food). I enjoyed the cooking, and also that I could practice Italian - I used to speak, but years ago, so was rusty, but they had patience and humor for me and we had good talks. I can only recommend if you are in Viareggio, really good and authentic experience, where you can speak with locals and also learn about the wonderful Italian cuisine .
