- Saraii Village - Upon arrival at the dairy farm, you’ll be given a tour of the different areas. Your hands-on experience begins with learning about the milking process. An expert will demonstrate the manual extraction of milk from the female buffaloes. If a calm buffalo is available, you might have the opportunity to try milking yourself. The freshly obtained milk is then filtered to eliminate any impurities and transferred into a large pot for boiling, which is a two-hour process. However, you’ll only make a brief stop here as the activities are ongoing and you can proceed to the next step.
A coagulating substance is introduced to the hot milk to induce souring. Historically, buffalo urine was used, but it has since been replaced with alternatives like tamarind pulp, natural microbes, or a bit of previously prepared curd. The milk is then decanted into a reddish-brown earthenware container, sealed with paper, and left to solidify for more than six hours. The clay pot is instrumental in the curdling process. While this overview is simplified, the actual procedure is complex and requires careful control of various elements to inhibit the growth of mold before the product spoils.
